Pumpkin Halwa (Gummadikaya halwa)

pumpkin halwa can be preferred as the best for festive season as it is one of the dish that can be made very easily.

INGREDIENTS
Grated pumpkin-2 cups sugar-1 cup ghee-5tbsp cashews food colour(optional)-yellow milk-1 cup elachi powder(amount required)
preparation:
Add 2 tbsp ghee into a pan and roast cashews until they get golden colour and set them aside.
In the same pan fry finely grated pumpkin until water in it evaporates.
Pour milk into it and let it boil for 10 mins.make sure that grated pumpkin absorbs all the milk into it,and then add sugar into the mixture and stirr it very well then moisture begins to release.
Add elachi powder.
If you want you can add some food colour which is optional.
Now add 3 tbsp ghee and mix it very well until the halwa thickens.
Now serve halwa into a bowl and garnish with fried cashews.
